Cut pancake into half (1st cut),
then half again, ie quarters (2nd cut).
Then stack the 4 pieces on top of each other, and cut the stack into half (3rd cut)
= 8 pieces.
He who cuts doesn't choose the pieces he wants. The onlooker chooses!

First cut makes TWO halves. Place both halves one above another and make a cut making FOUR pieces. Place these four pieces one above other and cut them to make EIGHT equal size pieces.

First cut makes Two circles (inner circle will have 2/3 radius) and two more cuts perpendicular to each other will result in 8 equal pieces

I would fold the pancake first then make the 3 cuts and then you have 8 pcs
 
His first cut is to slice it horizontal through the middle, place 2 halves back on top of each other
then slice it in half and then quarters = 8 pieces.

well, there's 2 possible ways although may be tricky, first way slice the pancake between top and bottom making 2 pankaes then put one on top of the other and quarter them, that's eight pieces. the other way is cut the pancake in half, place one half on top of the other and cut in half again,that'sfour pieces, repeat the process and you have eight pieces. BUT I am sure there's a les complicated and easier way.

Folds it in half and then cuts in the middle and then the middle of the two halves leaving four equal pieces on each side which opened out become eight

One cut separates the pancake into two halves.

Place each half one on top of the other and cut into two, producing two sets of two quarters.

Place each set of two quarters one on top of the other and cut into eighths.
