Baked Mashed Potato

I love potato any way and this one is so delicious, creamy and different.

Can be made the day before and heated or final cook on the day.
I have prepared it the day before up to the oven part .

Now I said it was delicious 😋 I didn't say healthy

Ingredients​

  • 2 1/2 kg potatoes, peeled and cubed
  • 3/4 cup sour cream
  • 1/2 cup milk
  • 3 tablespoons butter
  • Salt and pepper to taste
  • 3 cups shredded cheddar cheese blend, divided
  • 300 g sliced bacon, cooked and finely chopped
  • 3 shallots


Directions​

  1. Place potatoes in a pot and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.
  2. Drain and place in a large bowl. Add the sour cream, milk, butter, salt and pepper. Beat on medium-low speed until light and fluffy. Stir in 2 cups cheese, bacon and onions.
  3. Transfer to a greased small baking dish. Top with remaining cheese. Bake, uncovered, at 180°C or 160 °C fan-forced for 30 minutes or until heated through and cheese is melted.

Mmmm…even just reading the ingredients made my mouth water! 😋
 
Will try this when I have my ‘small family of 9 all together’ for another meal. It looks and sounds nice, instead of straight mashed potato.
 
don't appreciate this!!! I was asking a valid question!! the recipe calls for
  • 3/4 cup sour cream
so what to do with OTHER QUARTER!!!!
Where does it mention 1/4 cup ??

I stated 3/cup of sour cream in the Ingredients.

Method and step no 2 , I Said , add the sour cream. Didn't say how much so when saying add the sour cream it means all of it.

what to do with 1/4 cup sour cream??
It's given in the recipe from Suzanne rose. The recipe says 3/4 cup of sour cream so that is all you should have to add to the recipe.

You can do whatever you like with the left over sour cream and you can also freeze it for another time. Ask Google this question - 'what can I do with left over sour cream?' and you will get an answer.
