YOGHURT CAKE

I love using Greek yoghurt in cakes and this one is no exception
Tasty and sooo light and easy to make.
My sister inlaw who lives on the beautiful Greek island of Rhodes sent this to me a couple of years ago and it has become one of my favourites, it's so unbelievably light and fluffy.
INGREDIENTS
4 eggs separated
1 1/2 cups of Greek Yoghurt
4 Tablespoons of cornflour
1/2 teaspoon baking powder
2 Tablespoons of finely grated lemon rind or 2 Tablespoons chocolate chips ( you can use milk, dark or white chocolate)
2 Tablespoons of icing sugar
Method
Preheat oven 170 deg C or 160 deg fan forced
1. In a bowl add sugar and egg yolks , using a whisk or fork whisk together until smooth .
2. Add baking powder and cornflour and whisk until smooth
3. Add yoghurt and whisk until combined.
4. In a glass bowl add egg whites and beat with electric beater until soft peaks form.
5. Gently fold the egg whites into the batter.
6. Add the lemon rind or chocolate chips and mix through gently
7. Grease and flour a 20cm round cake pan and line it with baking paper
8. Pour cake batter into prepared pan and bake for 1 hour.
9 . Let cool for 5 minutes in pan , then remove and place on wire cooler and sift icing sugar lightly on top
