YOGHURT CAKE

I love using Greek yoghurt in cakes and this one is no exception
Tasty and sooo light and easy to make.

My sister inlaw who lives on the beautiful Greek island of Rhodes sent this to me a couple of years ago and it has become one of my favourites, it's so unbelievably light and fluffy.

INGREDIENTS

4 eggs separated
1 1/2 cups of Greek Yoghurt
4 Tablespoons of cornflour
1/2 teaspoon baking powder
2 Tablespoons of finely grated lemon rind or 2 Tablespoons chocolate chips ( you can use milk, dark or white chocolate)
2 Tablespoons of icing sugar

Method

Preheat oven 170 deg C or 160 deg fan forced


1. In a bowl add sugar and egg yolks , using a whisk or fork whisk together until smooth .

2. Add baking powder and cornflour and whisk until smooth

3. Add yoghurt and whisk until combined.

4. In a glass bowl add egg whites and beat with electric beater until soft peaks form.

5. Gently fold the egg whites into the batter.

6. Add the lemon rind or chocolate chips and mix through gently

7. Grease and flour a 20cm round cake pan and line it with baking paper

8. Pour cake batter into prepared pan and bake for 1 hour.

9 . Let cool for 5 minutes in pan , then remove and place on wire cooler and sift icing sugar lightly on top

No butter and no sugar ! I usually do it with lemon rind and sometimes orange rind.
I did try blueberries but didn't turn out , blueberries sunk and cake didn't rise as much
Yes, I would use lemon rind. I find orange rind a bit bitter, but that's just me. I don't know what it is with blueberries, as I have zero issues with raspberries. Must be due to them be more heavier.
 
Oh maybe raspberries might be nice in this cake
You can give it a try, but in my opinion, I wouldn't change this nice traditional Greek recipe. I personally wouldn't add the option of chocolate chips, but lemon rind would make it a lovely taste with the Greek yoghurt. It's the sort of cake that appeals to me.

This is the dairy free cake I made Sunday. The icing is butter cream done with Nutalex and the Beatle, Rainbow and side picture I did with fondant

The actual chocolate cake tasted like a mudcake , so yummy and I used the buttercream in the middle if the cake

Greeks use lemon in everything and that's why we have 4 lemon trees

Aaww such a great cake for a 2 yr old. It certainly turned out well ... you did a really good job.
Nuttelex can be used for baking. There are quite a few choices in their range, than there used to be.

Sounds lovely- I hope your sister in law is safe from the fires on the island of Rhodes.
I’ll have to try this, feels a bit like a soufflé?

Tonight we can't get through to her so hubby is panicking. It's terrible they have no help. She said last night so many houses and villages are burning. So many Animals are dying , so many deer dead on the road and birds dropping from the sky. Where my sons were staying last week it's burnt down

We in Australia can relate so much to these sorts of horrendous fires. I hope your loved ones come through this safely.
 
Managed to grow an interesting citrus fruit. Anaemic, tasteless but apparently quite useful. I did use a generous amount of the juice and peel in a lemon cake and it turned out well, albeit a bit dry. Have to infuse the next one with some custard. But it did taste nice drowned in Baileys

I'm trying out a yoghurt cake recipe that I found while looking for something else....only has 2 ingredients....Greek yoghurt and condensed milk....will let you know what it's like 😀

Oh no that’s terrible - what do you mean they have no help, isn’t there a fire department with hoses - no aerial water bombing?
