Mum shares her ULTIMATE breakfast pie recipe – perfect for the whole family!

While most of us here are probably either living with our significant other or enjoying our own company, there are others who live with their kids and grandkids at home.
And a bigger family under one roof means there are also more mouths to feed and stomachs to fill.
That’s why it doesn’t hurt to keep some “big” recipes in your back pockets, especially for those times when you just want to make your family feel special by cooking them a big, hearty meal.
Here’s an example of a big breakfast recipe! Perfect for those mornings when you find that your usual toasts, omelettes, smoothies, or any of your other single-serving go-to breakfasts aren’t just cutting it.

Cherie Metcalfe, a mum from New Zealand and the mastermind behind the food and seasoning company Pepper and Me, showed her viewers on TikTok how to make the breakfast recipe.
Here are the ingredients you would need:
- 8 eggs
- Cooked onion, diced
- Spinach, chopped
- 1 cup cheese
- Salt and pepper to taste
- Bacon, diced
- Sausages, chopped
- Tomatoes, chopped
- Puff pastry sheets
- Potato gems
And here’s how she did it:
In an extra-large metal bowl, crack eight eggs and add the diced bacon and cooked onions, the chopped sausages, chopped spinach, and chopped tomatoes. Follow by adding a cup of cheese.
Using a spoon or a large spatula, mix all of the ingredients together until well combined and then set aside.
Line a large oven-safe pot with sheets of flaky puff pastry, making sure that all sides are covered and there are extra puff pastries at the edges.
Pour the pie filling into the large pot and fold the pastry edges into the centre of the dish.
Then top the whole pie with several potato gems for that added crunch. Make sure not to leave any gaps! Finish with a generous sprinkle of salt and pepper then place the whole pot into the oven. Bake at 200 degrees Celsius for 45 minutes.
The pie should have a nice shade of golden brown once finished. Now all that’s left is to slice it up, serve it, and enjoy it with the rest of the family!
And since this recipe is quite big for the average family, you can always pop the leftovers in the fridge! Simply reheat to enjoy.
