Easy No bake Lemon Cheesecake

I'm not a big fan of Cheesecake but this one is an exception with its citrus flavour and creamy velvety texture.
It's one of my family's favourite.

Serves 16

Prep time ; 20 minutes plus standing and refrigeration time

Ingredients:

250g plain biscuits eg Arnotts Marie or similar even homebrand crushed

125g butter melted

500g cream cheese softened ...homebrands good

395g can sweetened condensed milk

1/4 cup thickened cream

Zest of 1 lemon finely grated

1/3 cup lemon juice

1/2 cup lemon flavoured spread

2 tsp gelatine


Method:

1.Combine biscuits crumbs and butter and mix together. Press into base and sides of a greased 22cm springform pan. Refrigerate while making the filling.

2. Using an electric mixer or food processor, beat cream cheese, condensed milk, cream, lemon zest,juice and lemon spread until thick n creamy.
Dissolve gelatine in a little water around 2 tablespoon. Add to cheese mixture; beat well.

3. Pour mixture into prepared base and Refrigerate until set. Allow 2 to 3 hours
I usually make the day before

Topping ideas :

1. Top with berries of choice

2. Top with candied lemon zest .

3. Serve plain or dust lightly with icing powder
