Coconut Ice Slice

Ingredients:

• Base


115 gm butter, softened

3/4 cup white sugar

1 egg, beaten

1 cup self raising flour

3/4 cup desiccated coconut

• Topping

75 gm butter, melted

3 cups icing sugar

11/2 cups desiccated coconut

3 tbsp milk

11/2 tsp vanilla extract

Directions:

1. Preheat oven to 180 deg C. Lightly grease a 19cm x 29cm slice tin.

2. For the base, cream the butter and sugar together, until light and fluffy. Add egg, then sifted flour and coconut. Mix well.

3. Pour into tin, and bake for 30 minutes.

4. For the topping, mix all ingredients together until well combined. Spread over the base while still hot. Cool, then cut into squares.
