Classic No-Fuss Cottage Pie


Cottage pie is one of my all-time favourite 'comfort' meals. I love to make it when I'm feeling a bit down, or when I want something hearty and satisfying. This is a classic version of Cottage pie, made with simple ingredients and with no fuss. Enjoy!

Cook ground beef and savoury vegetables together, then top with mashed potatoes and bake to perfection.
Ingredients:

1 onion, diced
2garlic clove, minced
1 carrot, finely chopped
1 celery, finely chopped
500 ml / 2 cups beef broth
750g / 1.6 lbs ground beef
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
2 bay leaves
salt and pepper to taste

For the topping:

1 kg / 2.2 lbs potatoes, peeled and diced
50 g / 1/4 cup butter
100 ml / 1/4 cup milk
40g / 1/4 cup grated cheddar cheese


Instructions:

1. Preheat oven to 180°C/350°F.
2. Heat oil in a large pan over medium high heat. Add onion and garlic, cook for 1 minute. Then add carrots and celery and cook until softened.
3. Add beef and break it up as it browns.
4. Add tomato paste, broth, Worcestershire sauce, thyme, bay leaves, rosemary, salt and pepper.
5. Cook until beef is cooked through and the mixture is reduced to a gravy-like consistency. Stir occassionally.
Transfer to a pie dish.
6. Cook potatoes in boiling water until soft.
7. Drain potatoes and mash with butter and milk. Top the meat mixture with the mashed potatoes and cover with grated cheese.
8. Bake for 20-25 minutes, or until golden brown.
9. Serve hot and enjoy!


P.S: What's the difference between shepherd's pie and cottage pie? Shepherd's pie is made with ground lamb or mutton, whereas cottage pie is made with ground beef.

That was my mistake @ROVIFOXY... I got my shepherds and cottages mixed up when we were writing the newsletter.
common mistake a lot of people do not know or care about the origins of the recipe and think that both types are called sheperds pie as explained above lamb or mutton is used in sheperds cos thats what sheperds herding sheep used to make any other type of mince meat used means it is a cottage pie
