Cinnamon Doughnut Muffin

I love doughnuts and I love muffins so why not add both together?

Makes 16 large muffins or 24 small

Preheat oven 170C or 150 C fan-forced

Ingredients​

  • 2/3 cup butter , room temperature
  • 1 cup sugar
  • 2 large egg, room temperature
  • 3 cups plain flour
  • 4 teaspoons ground cinnamon
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1 cup milk
  • topping:
  • 3 tablespoons butter, melted
  • 1/2 cup sugar
  • 1-1/2 teaspoons ground cinnamon

Directions​

  1. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs Combine the flour, cinnamon, baking powder, salt and nutmeg; add to creamed mixture alternately with milk until well combined.
  2. Fill greased muffin cups 3/4 full. Bake at 170 C deg or 150 fan-forced for 15-20 minutes or until a toothpick comes out clean.
  3. For topping, add melted butter to a shallow bowl. In another shallow bowl, combine sugar and cinnamon. Dip muffin tops in butter, then in cinnamon-sugar. Serve warm.
Note : These are best on the say they are made , they are so soft but 2nd day a little dry but still good . My son popped it in the microwave for 20 seconds

They look and sound delicious.

I buy this and use in cooking where I don't need unsalted butter.

I do find it easy measuring block butter in grams but can't do when I use this. Not that hard scooping it out with a spoon and pressing down I to a measuring cup.

This is a 2kg bucket for $10 that I use which is also great for the dairy free baking I do for the allergy children 😀

As I said before my passion is cooking . Usually the cinnamon muffins get eaten in one day. I made double the other day as I knew my daughter was coming and was sending some home with her, unfortunately she couldn't make it. I found on the 3rd day they were dry, still eatable but not soft like day 1 and 2.
Would love to see photos

I think because I was use to cooking every day for 15 people and cooking more than one dish due to different taste and now it's down to usually 3 to 4, I cook more.

Freeze them they stay fresh that’s what I do😁and you can microwave👍

Have tried to post photos in the past of my Renos I have done to my home (my passion) but I never have any success.
I can't figure out the problem as I have no problem sending photos to other people 🤷
