Chicken and corn frittata

Ingredients

Chicken and corn frittata

• 310 gram can creamed corn

• 1 cup shredded cooked chicken

• 3/4 cup grated tasty cheese

• 4 eggs

• 1 small zucchini, grated

• 1/3 cup milk

• 2 green onions, finely sliced

• 1 tablespoon plain flour

• salad greens, to serve
1 clove garlic crushed

Method

Chicken and corn frittata

• 1

Preheat oven to moderate, 180°C. Lightly grease 4 x 12cm individual pie dishes; arrange on a baking tray.

In a large bowl, whisk together corn, chicken, cheese, eggs, zucchini, milk, onion and flour. Season to taste.

Spoon mixture evenly into prepared pans. Bake 20-25 minutes, until set. Serve with salad greens.

love corn so this would be a favourite

I must say this post and recipe come close to what might be a reasonable food in terms of health. Take out the corn and flour and perhaps replace it with caulie flower and almond flour and its quite healthy. The milk is quite minimal, however if you don't have milk then maybe some full fat pouring cream.

Don't use any vegetable oils (never use it) and grease the pan with butter and the rest is quite good.

Good stuff SDC keep posting items similar to this when it comes to food. But perhaps add some alternatives to the ingredients (similar to above). Who knows you might end up making a difference to the health of our senior citizens.
