Blueberry Muffins

There are plenty of blueberry muffin recipes. This recipe is from Donna Hay.

2 1/2 cups S/R flour
1 teaspoon baking powder
1 cup raw sugar
1 egg
1/2 cup vegetable oil (I used Sunflower oil)
2 teaspoons vanilla essence
3/4 cup milk
300gr frozen or fresh blueberries

In a large bowl, place flour, baking powder and sugar. Using a whisk, mix to combine.
In another bowl, add egg, oil, vanilla and milk. Mix together with a fork, then add to the mixture.
Fold all together until just combined.
Add blueberries and mix gently.

Spoon evenly in 12 hole muffin pan.
Oven 180C fan forced, or 200C conventional for 25 - 30 minutes.

I have before and it’s no where near as sweet as a cup of sugar anyway each to their own right. 😊
Fair enough. I don't buy any commercial cakes or biscuits. So when I do bake something, I don't care about sugar with recipes. I realise people do though.
