Blueberry Muffins

There are plenty of blueberry muffin recipes. This recipe is from Donna Hay.

2 1/2 cups S/R flour
1 teaspoon baking powder
1 cup raw sugar
1 egg
1/2 cup vegetable oil (I used Sunflower oil)
2 teaspoons vanilla essence
3/4 cup milk
300gr frozen or fresh blueberries

In a large bowl, place flour, baking powder and sugar. Using a whisk, mix to combine.
In another bowl, add egg, oil, vanilla and milk. Mix together with a fork, then add to the mixture.
Fold all together until just combined.
Add blueberries and mix gently.

Spoon evenly in 12 hole muffin pan.
Oven 180C fan forced, or 200C conventional for 25 - 30 minutes.

I made these last time you posted it but couldn’t get blueberries so used chocolate chopped up instead and left out the sugar.
I’ll see if I can get blueberries and make them 😊

I think they might have been Suzanne's & Bullwinkle recipes. They posted yummy blueberry muffin recipes. My prior muffin recipe was blueberry yoghurt muffins. All blueberry muffin recipes are delish.

No it was definitely yours you were the first one to post muffins I have a memory of an elephant and I do remember the yoghurt 🐘 🤣🤣
Plus your chocolate and banana muffins also.

Well ... there you go! I made them today & I thought probably shouldn't post the recipe. But hey, it doesn't matter. ;)

I've also posted blueberry and banana muffins too. I've got a nice muffin recipe with cream cheese but I haven't posted that one.

Oh and I’ve always used it for my chocolate fudge slice minus the egg and sugar so it’s a thumbs up from me.
I love cream cheese please post asap as I’m doing a shop soon and need to get some thanks.😊

No. It doesn't come across as pushy. All good. The reason why I don't have a photo is the recipe is from an old recipe book.

Frozen works just as good as fresh

Yeah. Only make easy muffins these days. They freeze well too. Microwave for a little bit to warm them also.
 
Love these muffins , I try to reduce the sugar contents of most recipes , in particular the fruit has natural sweetness , I use mainly frozen blueberries or when the fresh ones are cheap , I freeze them . So handy to have a few leftovers in the freezer . Thank you for sharing .

Yes I agree I leave out sugar all together when using fruit or chocolate as I hate anything too sweet.😊

It's up to you, however if no sugar with this recipe they will have a dry texture.
