Baked Mashed Potato

I love potato any way and this one is so delicious, creamy and different.

Can be made the day before and heated or final cook on the day.
I have prepared it the day before up to the oven part .

Now I said it was delicious 😋 I didn't say healthy

Ingredients​

  • 2 1/2 kg potatoes, peeled and cubed
  • 3/4 cup sour cream
  • 1/2 cup milk
  • 3 tablespoons butter
  • Salt and pepper to taste
  • 3 cups shredded cheddar cheese blend, divided
  • 300 g sliced bacon, cooked and finely chopped
  • 3 shallots


Directions​

  1. Place potatoes in a pot and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.
  2. Drain and place in a large bowl. Add the sour cream, milk, butter, salt and pepper. Beat on medium-low speed until light and fluffy. Stir in 2 cups cheese, bacon and onions.
  3. Transfer to a greased small baking dish. Top with remaining cheese. Bake, uncovered, at 180°C or 160 °C fan-forced for 30 minutes or until heated through and cheese is melted.

It's given in the recipe from Suzanne rose. The recipe says 3/4 cup of sour cream so that is all you should have to add to the recipe.

You can do whatever you like with the left over sour cream and you can also freeze it for another time. Ask Google this question - 'what can I do with left over sour cream?' and you will get an answer.

Don’t worry any further Suzanne rose. I would hate to think how they follow other recipes and how the food turns out if they use all instead of only part of a product as mentioned in a recipe. We all have left over product when we have to buy larger quantities due to packaging sizes, and only need some of it for a recipe.

Don’t know about your state of mind, Defiant540, if you were unable to follow Suzanne rose’s very simple recipe when you needed to ask what you had to do with the remaining 1/4 cup of sour cream!!!!
