Baked Raspberry White Chocolate Cheesecake

This is another yummy cheesecake which would be perfect for Xmas day.

Bonus it can be made a few days before hand and is so easy to make !!

Ingredients
  • 1 1/2 cups sweet biscuit crumbs ( I use arnotts Marie biscuits)
  • 100g butter , melted
  • 3 x 250g Philadelphia Original cream cheese block softened
  • 1 cup caster sugar
  • 3 eggs , lightly beaten
  • 1 cup sour cream
  • 250g CADBURY Baking White Chocolate melted and cooled slightly
  • 2 cups frozen or fresh raspberries
  • Fresh raspberries , extra for decoration, optional
  • Raspberry coulis, optional
  • Icing sugar for dusting, optional
METHOD

  1. Preheat oven to 160 °C. 140 °C fan-forced

  2. Combine the biscuit crumbs and butter. Press into the base of a greased and fully paper-lined 24 cm round springform pan (ensure the paper extends 3-4 cm above the top of the pan). Chill for 30 mins.

  3. Beat PHILADELPHIA Cream cheese and sugar with an electric mixer until just smooth. Beat in the eggs then stir through the sour cream and chocolate. Stir through the frozen raspberries. Pour the filling into the prepared base.

  4. Bake in a moderately slow oven 160 °C for 40-45 minutes or until just set.


  5. Allow to cool in the oven with the door ajar. Chill the cheesecake for 2/3 hrs until set.
  6. Decorate with fresh raspberries, a drizzle of coulis and a dusting of icing sugar if desired, prior to slicing.

For raspberry coulis; place 1 cup fresh or frozen raspberries, 1 tbsp. lemon juice and 1.5 tpsps. of caster sugar in a small saucepan and reduce for about 10 to 15 minutes in low heat. Blend using an immersion blender and pass through a sieve to get rid of seeds

Thankyou Suzanne looks good .Just a thought though wouldn't it be better to use digestive biscuits there not as hard as Marie biscuits
You can really use any plain biscuits. Marie is my preference by the time they are crushed and butter added I actually find they are the softest and nicest .

I gave this recipe to a friend and she used and loved gingernut biscuits

So do I . If you look through my post you will find plenty of cheesecake recipes. They are so easy to make and most live them.

I just make a lemon cheese cake for tomorrow plus a custard pie and a pavlova plus gingerbread men.

I'm in Roselands Sydney .

Tomorrow morning I'm making pasta salad, potato salad, Garden salad and fried rice to take out.

I also made vegan cupcakes with vanilla butter cream for all my grandkids, alot have dairy allergies.

My daughter just called in on the way back to the hospital.
They told her that if the baby catches another virus before he is 6 months old he won't make it. His lungs are that weak.

We spoke and I suggested not to let anyone visit until he us at least 6 months old.

Top priority to do what is best for Leo. He’s far too susceptible to have visitors. Dear little baby boy. He needs to time to grow stronger. 💙
 
Oh Suzanne don't cry but l know how you feel as to what little Leo is going through and l sympathise . He looks lovely in that Christmas sleeping bag makes me want to pick him up and carry him away. Still saying prayers for him.All the best to you and your family and try and have a happy Christmas

Poor little Leo I hope he doesn’t get the virus my sisters been battling for a couple of weeks which is highly contagious. She’s had covid before even though she’s had the injections and she said it’s worse than covid. She sounded so 🤒 on the phone yesterday she’s on anti virals her hubby and daughter had it first. 🎅

The flu that is going around is horrible.

The hospital called my daughter at 11.30 to say they are transferring Leo from Randwick to a hospital close to my daughter.
I felt it was too soon to transfer him after what happened 2 weeks ago.
I sort of feel the hospital is rushing things. Like they took him off the oxygen and a few hours later he was back on. This photo was taken 1 hour ago while they moved him

Such a precious little boy I don’t blame you for crying I get teary every time I see him. Seems abit odd to move him let us know if they do,thinking of you all and lots of 😘also.
