Baked Raspberry White Chocolate Cheesecake

This is another yummy cheesecake which would be perfect for Xmas day.

Bonus it can be made a few days before hand and is so easy to make !!

Ingredients
  • 1 1/2 cups sweet biscuit crumbs ( I use arnotts Marie biscuits)
  • 100g butter , melted
  • 3 x 250g Philadelphia Original cream cheese block softened
  • 1 cup caster sugar
  • 3 eggs , lightly beaten
  • 1 cup sour cream
  • 250g CADBURY Baking White Chocolate melted and cooled slightly
  • 2 cups frozen or fresh raspberries
  • Fresh raspberries , extra for decoration, optional
  • Raspberry coulis, optional
  • Icing sugar for dusting, optional
METHOD

  1. Preheat oven to 160 °C. 140 °C fan-forced

  2. Combine the biscuit crumbs and butter. Press into the base of a greased and fully paper-lined 24 cm round springform pan (ensure the paper extends 3-4 cm above the top of the pan). Chill for 30 mins.

  3. Beat PHILADELPHIA Cream cheese and sugar with an electric mixer until just smooth. Beat in the eggs then stir through the sour cream and chocolate. Stir through the frozen raspberries. Pour the filling into the prepared base.

  4. Bake in a moderately slow oven 160 °C for 40-45 minutes or until just set.


  5. Allow to cool in the oven with the door ajar. Chill the cheesecake for 2/3 hrs until set.
  6. Decorate with fresh raspberries, a drizzle of coulis and a dusting of icing sugar if desired, prior to slicing.

For raspberry coulis; place 1 cup fresh or frozen raspberries, 1 tbsp. lemon juice and 1.5 tpsps. of caster sugar in a small saucepan and reduce for about 10 to 15 minutes in low heat. Blend using an immersion blender and pass through a sieve to get rid of seeds

Thanks she’s a tough old bird she survived covid twice and she’s on medication so I reckon she’ll be right.i reckon they picked it up on the car rally they went on which lasted two weeks and went around Adelaide. They started getting sick just after they got home.🤒

Such a precious little boy I don’t blame you for crying I get teary every time I see him. Seems abit odd to move him let us know if they do,thinking of you all and lots of 😘also.
They just moved him. I hope ots not too soon

My daughter is over the moon. He is now only 5 minutes from her.
They have given him a room of his own with amenities for my daughter eg a recliner.
The hospital he was taken too the NICU has just been completely built new. So he is actually the first one in his room.

His transfer went very smooth but my daughter said as he was taken outside for the first time he was squinting a lot , the light really bothered him.
They transferred via special nicu ambulance and team.

My daughter slept at the hospital last night.

I had an amazing afternoon/ evening at my sons. Enjoying a few of my grandkids including my two eldest geand daughters.

I think we all just felt relaxed after the past few weeks with what was happening with Leo.

My grandson who is 15 and severely autistic came with his careers and he came straight up to me and put his forehead on mine , then got excited and took off looking for the pavlova. As soon as he sees me, he also sees pavlova, which I always make for him.
We sometimes forget what is the most important things in life.

I even enjoyed my sister inlaws company reminiscing of our teenage years.

I can't wait until I can share photos of him home and of me holding him.

It has been a crazy journey starting from when my daughters water broke and the 10 days she tried her best to keep him in.

She told me the other day how she didn't go to the toilet for over a week as she was scared just a little push would bring him out.
It's overwhelming how many people on here have messaged me asking about him . As you can't send pictures through messages I thought it was easier to update in post.

He is now 2.6 kg he is still tube fed with his mums milk but they add a protein powder which they have now cutback from.
My daughter just messaged me that one of the nurses looking after Leo is a friend she went to uni with. She went on to work in paediatric whereas my daughter went to surgery
