Yoghurt, Berry and White Chocolate Muffins
- Women's Weekly

1 1/2 cups S/R flour
1/2 cup caster sugar
2 tablespoons oil
2 eggs, lightly beaten
1 cup yoghurt (I used vanilla yoghurt, or use plain or berry yoghurt)
1 cup (150gr) frozen mixed berries
100gr white chocolate, chopped coarsely or choc chips

Mix the flour and sugar into a large bowl (I use a whisk).
Stir the oil, eggs, yoghurt, frozen berries and chocolate into the flour mixture with a wooden spoon.
Stir about 10 times, as the batter should be lumpy.

Spoon mixture in a 12 hole muffin pan.
Oven 180 degrees fan forced, or 200 degrees conventional for about 30 minutes.
Rest muffins for 5 minutes in muffin pan, then cool on a wire rack.

Only thing I will change is the White Chic for Milk choc.
White choc is only the oil removed after repairing the milk & dark chocolate. White choc is just solidified oil.
Yuk I just read about white chokky think I’ll stick to milk chocolate learn something new everyday. Thanks👍
