Vegetarian Carbonara: A Deliciously Easy Recipe

Craving some pasta but don’t want to break the bank? This budget vegetarian carbonara recipe is for you! Made with just a few simple ingredients, this dish is hearty, flavourful, and sure to satisfy.

Ingredients:

4 eggs
200ml chilli oil (50ml per egg)
450g linguini (or spaghetti)
1 bunch spinach
Aged Grana Padano parmesan cheese

Instruction:

1. Place a square of cling wrap in a small bowl or cup to cover the surface area. Add 50ml of chilli oil and then crack an egg into it.

2. Bring the four corners of the cling wrap together so that they are above the egg. Pinch and twist the cling film to remove any air, then tie it off with a short piece of string. Repeat this process with all of the eggs.

3. Place two pots of water on the stove. Wait for it to boil, then place the cling wrap eggs in one pot. Boil for 3 minutes.

4. In a separate pot, fill a large pot with water and bring it to a boil. Cook the pasta according to package instructions.

5. Add the spinach to the pot containing the pasta when pasta has 1 minute left to go before it becomes very al dente.

6. When the pasta and spinach are cooked, drain them using a colander.

7. Using a fork or a pair of tongs, place pasta onto a plate making a little dip in the middle. Add some spinach.

8. Cut the cling wrap near the string with scissors to allow the egg to slide out. Place egg in the small dip of pasta, season with salt and pepper, and cover with grated parmesan. Serve.
