Why isn't a fireman called a waterman?

I love our language! There are so many idiosyncrasies, because it’s a constantly evolving process. At school in Scotland in the 60s we studied English etymologically, which helped us to understand the origin and evolution of words. I enjoy jokes that make clever use of words.
