Tuna Mornay Jacket Potato

My favourite dish has to be the humble potato stuffed .

Crispy and fluffy jacket potatoes topped with the flavours of a Tuna Mornay but without all the heaviness

This is a very easy and so delicious 😋 have it as a meal or a side.

Ingredients​

  • 4 potato large
  • 2 tbs olive oil
  • 370 g canned tuna in olive oil
  • 4 tbs Greek yoghurt
  • 1/3 cup can corn kernels
  • 1/3 cup cheese finely grated
  • 1 onion diced
  • 1 tbs parsley chopped
  • 1 pinch salt
  • 1 pinch pepper

Method​

  1. Pre-heat the oven the 200C.
  2. Pierce potatoes with a knife and place in microwave on high for 14 minutes, turning once half way.
  3. Place potatoes on a try, drizzle with olive oil, sprinkle with salt and pop into hot oven for 10 minutes or until nice and crispy as desired.
  4. Meanwhile, in a bowl a add tuna, yoghurt, corn and salt and pepper in a small bowl and mix well.
  5. Place jacket potatoes onto serving plates, make a cross cut in each potato and pinch to fan out.
  6. Place some cheese inside the potato. Top with tuna mix, sprinkle with parsley and onion. Serve. ( I personally leave out the onion)

Note

If you don't have a microwave then bring a pot of water to the boil and boil potatoes for around 8 minutes. You want it soft but still firm.

My version would be a somewhat scooped out large potato filled with diced tomato, mushrooms, bacon/ham, onion, olive, garlic and capsicum, topped with mozzarella cheese, oregano and ground pepper!

My version would be a somewhat scooped out large potato filled with diced tomato, mushrooms, bacon/ham, onion, olive, garlic and capsicum, topped with mozzarella cheese, oregano and ground pepper!
I'm cooking jacket potatoes just for me tonight. Scooping out the potato and mashing it with mozzarella cheese after its cooked in the oven I will add a dollop of sour cream and shallots
 
I’d have to substitute the fish for something else, but love “stuffed potatoes”. I usually make a meal of them. Maybe a bit of salad on the side, but not necessarily.
Stuffed potatoes are my favourite meal. Sadly one son , two daughters and myself are the only ones who love jacket potatoes . I also serve with a tossed salad on the side

Well I have at least a dozen recipes swirling around in my head for the next week or so ranging from Honey Chicken and Noodles to Herb Crusted Roast Chicken to Beef and Black Bean Sauce. All made from scratch with no ready made sauces etc. Stuffed Potatoes is just one more!

Potatoes are such a versatile and yummy vegetable. It was my mum’s favourite vegetable, so we ate them nearly every day. “What, no potato?” 😆

Except for the olive it sounds delish - may have to try it myself. Although I am not a great fan of potatoes these sorts of meals are great when Griff is on the road, and I am home alone.
