Step 1:

Start by cutting the potatoes. Then, place them in a bowl of cold water and make sure to change the water frequently over the course of an hour. This process helps remove the starch from the potatoes, resulting in beautifully crispy chips.

Step 2:

Once the hour is up, drain the potatoes. Grab an oil thermometer and heat up some vegetable oil to around 170°C. Take the potato and cook them in batches, making sure they become soft without acquiring any colour.

Step 3:

Now it's time to turn up the heat! Increase the oil temperature to around 190°C. Take the partially cooked chips and return them to the oil, again working in batches. Fry them until they turn crisp and take on a delightful golden hue. Don't forget to sprinkle some salt on top to enhance the flavour when serving.

I always ask for chips without salt, I don't mind waiting for fresh ones.

Wow I shall try that. My chips are crispy just out of the oil but then go soft . I will double fry them. Thanks for that!

They do go cold and limp very quickly. Our local Maccas are filling the chip containers less every time we get them. They used to be full to overflowing, now they are at least one to two inches down from the top. Feels like we are getting ripped off. Have complained several times but don’t even get a reply. Same as local KFC, they are double dipping on some meal combos, they charge GST on each item, then again on the meal combo. I have complained to a store manager and to KFC head office, and to the Independant Pricing Tribunal, might as well bang my head against a brick wall for all the good it did.
