Tasty Tomato Tart

This delicious, easy tomato tart is a wonderful weekday dinner option. Perfectly packed with lycopene and vitamin C, this tasty meal isn’t lacking in healthy snacking!
It's something a little more special than pizza, giving you the depth of flavour but with a unique combination of colourful ingredients. Plus, with a short, simple list of ingredients, it's easy to make, and the result will surely impress. Give it a go!
Here’s what you need:
1 sheet frozen puff pastry, thawed
1 onion, thinly sliced
1 teaspoon olive oil
2-3 large tomatoes, sliced
1 cup of your favourite cheese (blue cheese, cheddar, mozzarella, feta, or Parmesan)
1 tablespoon Italian seasoning, or chopped fresh herbs like basil and oregano
If you have all that down, start with the cooking!
First, preheat your oven to about 218 degrees Celsius. Line a baking sheet with parchment paper or aluminium foil.
Next, place the puff pastry on the lined baking sheet. Poke small holes along the bottom of the pastry after.
In a skillet, fry onions with olive oil over medium heat. Stir for about five minutes or until the onions turn soft.
Once the onions are cooked enough, sprinkle them over the pastry dough. Place the sliced tomatoes, some (not all!) of the herbs, and then your preferred cheese on the pastry next.
Season the topped puff pastry with salt and pepper to taste.
Lastly, bake for 25 minutes until the crust is golden. Sprinkle with what’s left of the herbs, cut into squares, and enjoy!
