Sweet Potato and Feta ‘Sausage’ Rolls

Who doesn’t love a good sausage roll? These delicious snacks are perfect for any occasion, and now you can make them even better with this recipe for Sweet Potato and Feta ‘Sausage’ Rolls. These sausage rolls are not only easy to make but they’re also packed with flavour. The sweet potato and feta filling are encased in flaky puff pastry and baked to golden perfection.
To make this dish, you will need:
500g sweet potato, peeled, cut into 2cm-pieces
1/2 brown onion, finely chopped
40g (1/2 cup) walnuts
100g smooth feta, crumbled
1/2 tsp finely chopped fresh rosemary
Pinch of ground cinnamon
2 sheets of frozen puff pastry, just thawed
1 egg, lightly whisked
1 tbsp sesame seeds
Greek yoghurt, to serve
Instructions:
1. Preheat oven to 1800C/160C fan-forced. Line 2 baking trays with baking paper.
2. Place sweet potato and onion on the prepared trays. Bake them for 30-40 minutes or until softened. Note: Add the onion to the oven 15 minutes after you’ve put the potatoes. Set aside to cool.
3. Meanwhile, roast the walnuts on a small baking tray in the oven for 5 minutes or until toasted. Set aside to cool, then chop.
4. Crush the potato using a fork in a large bowl. Then, add the onion, walnuts, feta, rosemary and cinnamon—season with salt and pepper. Mix using your hands until combined.
5. Cut each pastry sheet in half. Spoon sweet potato mixture evenly among pastry sheets. Brush the opposite long edge with egg, then fold the pastry to enclose the filling. Cut each roll into three pieces and place seam-side down on the prepared trays.
6. Brush pastry with egg. Sprinkle with sesame seeds—Bake for 25 minutes or until golden brown. Serve with yoghurt.
