Summertime Salad #2

This is another lettuce salad that I prepared with lettuce from our garden, and fresh fruit which were purchased from the grocery store. The bottled salad dressing I served with this salad was, Tuscan Garden-Light Raspberry Vinaigrette Dressing from the grocery store.



Summertime Salad #2

Prep Time: 20 Minutes
-

~ lettuce, fresh from the garden, torn into bite-size pieces

~ seedless cucumber (or English Cucumber), sliced

~ fresh garden tomatoes, cut into bite size pieces

~ fresh blueberries

~ fresh blackberries

~ radishes, sliced

~ Gouda Cheese, cut into bite-size pieces

~ croutons, to serve with salad


1.) Before assembling this salad, be sure to thoroughly clean, wash or rinse your fresh vegetables. Then pat dry with paper towels.

2.) Slice cucumbers, tomatoes, and radishes into desired pieces. Then place in a bowl to serve.

3.) Place the cheese and croutons on top of salad, just before serving.

4.) Use desired amount of salad dressing to go along with the salad, and enjoy!

5.) Servings depends on the amount of fruit and other ingredients added to make each salad.

Is this salad dressing available at Australian Aldi shops? I have never seen it.
 
Nothing hard here, I would leave out the radishes ( wished I liked them) I would add capsicum and either julienne or grated carrots

My daughter always laughs at me how much lettuce I eat by itself.
I love lettuce yum 😋 and can’t afford radishes when available they are so expensive, grow your own if you can.😊
And yeah nothing hard about doing a salad. 🙄

My neighbour just gave me some lettuce from her garden, but I also have an iceberg lettuce in the fridge.
No yukky radishes for me either. I'm fairly sure we don't get that Tuscan garden-light raspberry vinaigrette dressing here at our Aldi. However, we have other yummy dressings to use.

A good recipe to make your own is

  • 1 cup raspberries fresh or frozen
  • 1/8 cup wine vinegar red or white
  • 1 Tbsp olive oil extra virgin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 teaspoon sweetener optional – honey, agave,

Instructions​

  • Rinse the raspberries and place them in a small saucepan. Roughly mash the raspberries with a potato masher or fork.

    If you think that the raspberries are not sweet enough, you can then add 1-2 tsp of sweetener.
  • Heat them on low heat for about 5 minutes. This will help to intensify the flavors. Stir the mixture occasionally.
  • Once reduced, sieve the mixture with a fine mesh strainer. This helps to get rid of the raspberry seeds and excess thick fruity pulp.

    If you don't mind your dressing with a bit of "body", feel free to skip this step.
Allow the raspberry mixture to cool before mixing with the remainder of the vinaigrette ingredients – olive oil, vinegar, salt, and pepper. Whisk well. Taste the dressing and adjust the sweetness/acid, as needed.

Penny4, you can top your salad with your favorite bottled dressing. I just happened to use what was in my pantry at the time I made this salad.

Maybe you should have said that you live in the USA so people were not running around looking for this dressing.

Remember this is an Australian forum with mostly Australian Seniors.

Yes, I always have coleslaw dressing or I make my own with the traditional formula of three parts olive oil to one part vinegar (or lemon juice) plus a little Dijon mustard and pepper.
