Stuffed Roasted Mushroom Tomatoes

I'm going to be honest I hate Mushrooms but most of my family LOVE them.
They also love stuffed tomatoes , so I put these two together.
This recipe was created by me !
NOTE : IF YOU WANT LESS JUST HALF RECIPE
INGREDIENTS:
. 10 Medium red tomatoes flesh scooped out
. 300g Mushrooms , sliced . ( I use button Mushrooms) any are OK.
. 1 cup of cooked white rice.
. 1 tablespoon tomato paste
. 1 large onion finely chopped
. 1 crushed clove garlic.
. 1/4 cup olive oil or vegetable oil
METHOD :
1. In a frypan , add oil ,when heated add onion and cook until just soft, then add garlic, stir for 2 minutes.
2. Add Mushrooms to onion, mix through.
Cook until mushrooms are soft.
3. Add cooked rice, tomato paste, inside of tomatoes, salt n pepper to mushrooms.
4. Put tomato shell in a baking dish and fill each tomato with Mushroom mixture.
5. Add one cup of water to pan and 1 tablespoon of butter to pan.
6. Cover with foil and bake in moderate 160 deg preheated oven for 1 hour . Then remove foil and cook for further 15 minutes .
Great dish to serve as a whole meal or as a side.
I will also occasionally add potatoes to the pan cooked in a tomato sauce . Exactly how I do the stuffed tomatoes done with meat.
Below is another way of cooking them.
Do step 1 to step 4 above then continue from below
Sauce
200g crushed tomato Can or fresh
1 Tbsp tomato paste.
2 cloves chopped garlic.
1/2 tsp dried oregano.
1/2 cup water.
1/4 cup olive oil.
Salt n pepper
Method
In a small bowl, combine all the ingredients for the sauce and spoon it over the potatoes and tomatoes in the tray. Give everything in the tray an extra drizzle of olive oil and a sprinkling of salt.
Cover tightly with aluminium foil and bake for 1 hour and 30 minutes then uncover and bake for an additional 15 minutes
