We take our home made food down to the beach , unfold our chairs , lay out a blanket and enjoy the view. I’m on a pension. Haven’t been to a restaurant for over a decade. 😊
 
I'II sit on my own deck with my own water view and eat my home made pasta for a fraction of the cost, or go inland and look at trees and eat the same meal for $35 bucks. His problem he has high maintenance costs having his business on the water, why should we pay, I don't have any one other than myself to pay my maintenance costs for living on the water, suck it up and drop the price.

I'm with everyone else, there is no way a pasta dish is worth $68 in anyone's world, view or not. He says he is sourcing best quality suppliers, I'll bet he is not paying them high view prices.
 
Years back in my early 20's my ol eh panel van broke down outside of a highway stop called two wells up in the norther territory. After the vehicle went up on the hoist, he said I will do it tomorrow and closed the Garage, it was about 3.30 in the afternoon. But what could we do about it.

The mechanic we were to soon discover, was also the cook?
So, as my van was up on the hoist, and I went in with a mate that I was travelling with to get a meal. The prices were OUTRAGEOUS $30.00 for fish and chips.

The guy was surly when I bawked at the price. he didn't like long haired hippy looking fellas, you could tell. I though why not and ordered the fish and chips because my mate decided to try it.

Two large tins of cold sardines in tomato sauce came out on two plates. He dumped them on the table and said here's your chips and poured a mountain of potato chips over both plates and walked off.
He was the mechanic. Nothing we could do but bite our lips and eat one of the worst tasting cold meals I have ever eaten in my life.

I do have an enduring memory of a 6'4 huge-bellied man with a stained singlet on and oil-stained pants tied up with rope and an old rolled cigarette hanging out of his mouth though. It was just like being in a movie. We laughed about him all the way to Cairns.

No waiter or waitress has ever come anywhere close to looking like that since thank God. There really are people in modern restaurants that charge exorbitant prices. But the cooks are clean (hopefully) and the waitresses and waiters are always nice...

Looking at the posts I think many people are missing the point. About 10 years ago, when I was still working, there was a restaurant in Port Melbourne that I used to eat at on special occasions. Their signature dish was a seafood pasta at $55. The sauce was made with fresh crabmeat, lobster and other prime seafood and had mussel and pippies tossed through the house made tomato sauce, garlic and chilli were optional. It was a gourmet treat and often you would have to order ahead to be certain of getting it. The seafood was bought fresh every day and when it was gone...
Looking at the original post, the sauces in question here are seafood, the other quail, both high end ingredients.
Pasta itself is cheap and you wouldn't pay those prices for a stock standard spag Bol or a Marinara, but premium sauces are understandably premium prices.
Considering that a Macca's BM meal now sets you back about $15. That's for a soggy Burger, soggy fries and a cup of ice with a spray of soft drink,😉
 
Don't care what goes into a dish, paying that kind of money would be my way of flaunting the fact that can actually afford it. That's why it will never happen.
Even if I had the means, I would not waste my time looking at that venue.
Give me the local Italian restaurant with Nonna out the back cooking up a storm, check table cloths, intimate atmosphere with the smell of real home cooking wafting through the room. Put a bib on then bog in don't wait. $68 for a pasta dish ... Pfffff!!
I have simple tastes that, fortunately, match our budget.
If fine dining while looking out at the beach is your bag, then power to you.

And that view on the beach is still free in Australia, not like those in Europe. Even though they did try to have paid longer beach chairs 😅.

It's hard to make a comment when there is no breakdown of the costs Quail not cheap it also had seafood and imagine the rents where they are and we don't know the salaries of the chef or the waiters

I agree that the price is expensive but if I could afford it I would eat there occasionally. I have been very disappointed in pub meals which are not inexpensive so to pay for a delicious specialty meal with views would be something I woild like to do at least once.

Ocean air is free, for a scoop of sauce on some pasta, regardless of homemade is outrageous. On Hamilton Island, they wouldn't charge that much and that is prime land with better scenery. Mr. Terzini is making a killing. I would not go there to eat. He can keep his pasta, our "ocean air" and location. I'll try to avoid his restaurant in Melbourne.
 
Madness in price like that even if Ragu or seafood. I made spaghetti Bolognese sauce yesterday in my slow cooker. I used half the mince meat (50% of grade 4 $8.99) and half Pork mince (50% of $3.99) both purchased from Aldi. I then grated 5 carrots (80% of $1.00 packet = $0.80 Woolworths sale $1.00), 6 deluxe brown onions ($8.00 Woolworths have these now 5 kilo bags and they are the deluxe large brown onions ($1.50-$2.00) and the very best on the market, minced jar garlic (I empty the jar and then cut into cubes), Bay leaves, Aldi tomato paste (4-5 tablespoons), Coles French Onion soup powder 3x packets (3x $0.45 Coles brand), Tin Tomatoes 3x (3 x $1.00 they were on sale a while ago and using up), Mushrooms approx. 250 grams of 500 gram Aldi pack (50% off $5.49 = $2.50). Worcester sauce and white sugar. Yes, white sugar. See below.
Also, not salt at this stage as plenty in French Onion soup and you can add it if you need to when eating it.

Cost per sauce serve for me is about $1.20-$1.50 at the very very most.
I get about 15-18 serves.

* Grated carrots into heating-up slow cooker.
* FRY PAN: Saute 'some' brown onions (say 4) in fry pan in some oil and slight saute and minced garlic at the end and slightly cook, tossing with tongs. Do not burn garlic. Low heat now and all of it then goes into the into slow cooker.
* SAUCEPAN: In saucepan, some oil and then 50% of each mince and start to cook off.
* Empty two packets of French Onion soup onto this in slow cooker.
* Two more cut up brown onions and add to mince, cook off until soft.
* Add a little more mince garlic to the cooked mince.
* Worcester sauce: Add some to the mince. Cook some more.
* FRENCH ONION SOUP (1 packet now) Empty into mince and cook, tossing through just slightly cooked mince.
TIN TOMATOES: Add tin tomatoes to mince and use some water to wash out tins. Slightly cook some more.
TOMATO PASTE: Add to mince, slightly cook.
HEAT ON SAUCE: Lower when adding tin tomatoes, tomato paste. You are about to add to slow cooker.
* ADD MINCE, SAUCE TO SLOW COOKER.
* SUGAR: (Yes, white sugar everyone). This is the trick Italian or most Italian people use in a lot of tomato sauces as it takes the acid away. Add about 2 -3 tablespoons to the sauce and then when it's cooking and you turn the sauce in the slow cooker. Taste it, do you need more sugar. Add more if you do. You do not want that acid taste from the tomatoes.
* I let mine cook in slow cooker high heat for 8-10 hours. Using silicon spoon to toss/mix as my slow cooker container is non-stick metal and not a clay made one. It's much lighter and does not chip. Heats faster as well. I use a spatula (silicon) and soft soup ladle to serve or empty for freezing. I use a tray with lined baking paper to freezer. When first batch freezing, I then get tray out, lay another layer of baking paper, and then Bolognese sauce and it's back into freezer for freezing. I then cut into portions and freeze in good quality freezing bags.
 
Ocean air is free, for a scoop of sauce on some pasta, regardless of homemade is outrageous. On Hamilton Island, they wouldn't charge that much and that is prime land with better scenery. Mr. Terzini is making a killing. I would not go there to eat. He can keep his pasta, our "ocean air" and location. I'll try to avoid his restaurant in Melbourne.
Totally agree even for others charging prices like this. These places have always gone broke even for Top Chefs were their TV presentations and cooking shows have gone to their heads. They charge crazy prices and everyone of them has gone under or eventually Go Under.
