Royal chefs share Royal Family’s Christmas Pudding recipe


The Queen's chefs have revealed their recipe for the Royal Family's Christmas pudding which supposedly follows the superstition of making it with 13 ingredients to represent Christ and the 12 apostles. But this royal recipe makes use of beer rather than the traditional port.

“This year, chefs in the royal kitchens have shared their recipe for a traditional Christmas pudding. We hope that some of you enjoy making it in your own homes,” said the caption on Instagram.

How to make the Royal Family’s Christmas Pudding:

Ingredients are as follows:
  • 250g raisins
  • 250g currants
  • 185g sultanas
  • 150g mixed peel
  • 250g suet or vegetarian suet
  • 250g breadcrumbs
  • 90g flour
  • 12g mixed spice
  • 2 whole eggs
  • 180g demerara sugar
  • 275ml beer
  • 40ml dark rum
  • 40ml brandy
(If you don’t want to use alcohol, you can substitute it for orange juice or cold tea.)

The steps are as follows:
  1. Combine all dry ingredients and stir them up.
  2. Add the eggs, followed by the liquid ingredients, and stir them all up.
  3. Prepare your pudding basins by greasing the surface.
  4. Press the cake mix firmly in the basins, then cover with a circle of parchment paper.
  5. Then, cover basins with muslin or foil, and place the puddings into a deep saucepan.
  6. Fill up with water up to three-quarters of the pudding basin’s height.
  7. Cover with foil.
  8. Steam for six hours, refill with water if necessary.
  9. Once cooled, wrap the puddings well. Keep in a cool, dry, and dark place until consumption.
On Christmas Day, reheat the pudding for 3-4 hours. Remove from the basin using a rounded or palette knife, flip out onto a plate, add garnish and then serve with brandy sauce and cream.
