Roast Pumpkin and green bean salad

Ingredients:
1kg Pumpkin 🎃 peeled and cut into cubes
2 tablespoons of olive oil

1 tablespoon of ground cumin

200g of green beans topped n tailed, basically ends removed and strings removed I buy string less beans

100g rocket

100 g fetta cheese, cut into small cubes

Salt n pepper

Dressing

3 tablespoons vegetable oil
1 tablespoon sesame oil
1 tablespoon tamari or light soya sauce
Salt n pepper

Method
Preheat oven 200 °C / 180 °C fan-forced

1) place Pumpkin in a roasting pan, drizzle with olive oil, sprinkle with cumin and toss to combine.
Roast for 25 min, turning occasionally until Pumpkin is soft and slightly brown

2) to make dressing , place all ingredients in a bowl or jar and mix or shake

3 ) boil the beans for 3 minutes, drain and place in ice water for 1 minute ( this stops the cooking)
Then drain

4 ) place rocket on a platter or serving bowl. Add and arrange Pumpkin 🎃 fetta, green beans. Pour over dressing and toss to combine, add salt n pepper to taste

Note:
1. this is a meal in its self or a side dish

2. Tamari is a Japanese type of soya sauce I find it sweeter than soya sauce although Sota sauce is a good substitute. Available from most supermarkets
