Minus F & E (ie 2) = IV, ie FOUR

Take two letters f & e from five leaving IV which is 4 in Roman numerals
Take two letters (the first and last letters) from the word FIVE and you are left with IV, which is the Roman numeral for the number 4.
Remove the first and last letters from five and you have iv which is 4 in roman numerals.
