Ricotta Cheese Tarts

These are great served with salad as a whole meal.
Ingredients:
2 sheets of ready rolled puff pastry
150g ham, chopped
12 cherry tomatoes
2 tablespoons chopped fresh chives or 1 tablespoon dried chives
125g ricotta cheese
3 tablespoons freshly grated parmesan cheese
3 eggs lightly beaten
1/2 cup of Greek yoghurt
A little Salt n pepper
Method:
1. Preheat oven to 200 deg Celsius . Lightly oil a non stick muffun pan.
2. Cut each sheet of pastry into six squares. Press these into muffin pan .
3. Divide ham, tomatoes and chives between the pastry bases.
4. Put ricotta, parnesan, eggs, yoghurt, salt n pepper into a bowl and whisk together. Pour this mixture over the ham and tomatoes and bake for 12 - 15 minutes or until just brown.
I promise you everyone will love these and will want more.
