How to Make Raspberry, Mango & Coconut Ice Cream Pudding
Ingredients

- 1 cup Forresters Walnuts
- 3 cups Sweet Vine Dates
- ½ cup Sweet Vine Dried Apricots
- ½ Sweet Vine Dried Cranberries
- Zest of 1 lemon
- ½ tsp nutmeg
- ½ tsp cinnamon
- 4 tbsp Oh So Natural Cacao Powder
- 1 cup Orchard & Vine Frozen Raspberries
- 1 cup Orchard & Vine Frozen Mango Pieces
- 1 cup Asia Specialities Full Cream Coconut Milk
- 1 tsp Stonemill Vanilla Extract
Pudding:
- Blend walnuts, apricots together. Place in a bowl. Add lemon zest, nutmeg, cinnamon and cranberries.
- In a blender add dates and cacao powder, blend until well chopped. Add to other ingredients.
- Mix together with your hands until forming a ball.
- Spray a small stainless steel bowl with cooking spray. Press mix into bowl to form pudding shape.
- Puree frozen fruits, vanilla and coconut milk until smooth. Pour into a jug and freeze until needed.
- Turn pudding out onto a plate and place a small scoop of ice cream on top for garnish.
- Serve pudding with extra ice cream as desired.
