Quick and Easy Chilli (Dinner in Under 15 Minutes)

Your time is valuable but so is your health. That’s why we’ve got a healthy and quick dinner idea for you today! This chilli is great to eat within 15 minutes of starting and it’ll help you hit your daily vegetable goals. Season however you like or simply enjoy the tomato taste.

Serves 2
Ingredients
4 tsp olive oil
2 red capsicum* Chopped
2 handful of mushrooms* Chopped
Spring onion* Chopped
a pinch of chilli flakes (optional)
1 can beans (your choice)
1 cup tomato pasta sauce (you can substitute for canned diced tomatoes but you’ll need to season)
2 cup vegetable broth/stock
3-4 handfuls of fresh baby spinach
Serve with bread or a toasted tortilla*
*Use whatever you have on hand.
Instructions
Add olive oil to a medium saucepan and set the heat to medium-high.
When the pan is hot, add your vegetables of choice and chilli flakes (if you like it spicy)
Cook for 4-5 minutes (vary slightly depending on vegetables used), stir occasionally
Add beans and pasta sauce
Add vegetable broth and bring to a boil
Simmer for 2-3 minutes over medium heat
Add spinach and allow to wilt down
Serve and enjoy!
While this isn’t technically a set-and-forget meal, it is SUPER quick and perfect for those days when you don’t want to cook but do want to eat something nutritious. Let me know what you think in the comments!
