Prawn and Egg Fried Rice

Comfort food doesn't get much better than delicious fried rice. It seems that it's a staple in many households too! No matter the age, there’s something truly warming and indulgent about this Asian classic. And it’s not hard to see why; it’s so easy to prepare, budget-friendly, and incredibly delicious. Now, you don’t even need to go to a restaurant to enjoy it.

Here are the ingredients you need:

1. 2 1/2 tbsp sunflower oil
2. 3 eggs, lightly beaten
3. 2 small red chillies, seeds removed, chopped
4. 6 spring onions, finely shredded
5. 2 garlic cloves, finely chopped
6. 400g peeled green prawns, tails intact
7. 200g white rice, cooked to packet instructions
8. 1/3 cup (80ml) soy sauce
9. 1 tsp sesame oil
10. 2 tbsp sweet chilli sauce (optional)
11. 1 cup (120g) frozen peas
12. Coriander leaves (optional), to serve
13. Lime wedges (optional), to serve


First, heat your trusty wok or large frypan over medium-high heat, and add 2 teaspoons of sunflower oil. When the oil has heated up, add the beaten eggs and cook, stirring, for 1-2 minutes until softly scrambled. Remove the egg from the pan and set aside.

Add the remaining 2 tablespoons of sunflower oil to the pan, then cook chilli, spring onion and garlic, stirring, for 1 minute or until all the ingredients are fragrant. Next, add the prawns and cook for 2-3 minutes until they’re opaque. Once the prawns are cooked through, you can add the egg back into the pan with the white rice, soy, sesame oil, sweet chilli sauce and peas. Then cook, stirring, for 2-3 minutes or until everything is warmed through.

Finally, if you want to make it look even more delicious, you can toss in some fresh coriander leaves for garnish. We also suggest that you serve your fried rice with some lime wedges for a little extra zing. Bon appetit!
