Potato and Broccoli Bake

When I made this I wasn't expecting it to be as good as it was.
Add as a side for meat, meatballs ect also a great side for a bbq

Recipe by An Italian In My Kitchen

INGREDIENTS

  • 4 medium potatoes (peeled)
  • ⅓ cup freshly grated Parmesan cheese
  • 2¼ cups broccoli florets
  • 2-3 sprigs oregano or thyme

WHITE SAUCE​

  • 2¾ cups milk
  • 3 tablespoons butter
  • 3 tablespoons plain flour
  • 1-2 pinches salt*
  • 1-2 dashes black pepper

*If you use unsalted butter add a bit more salt.​

Instructions​

  • Pre-heat oven to 180C./ 160°C fan-forced
  • 1. Boil the potatoes in salted water until tender but firm, remove to cool, then cut into ¼ inch slices, in the same water add the broccoli florets and cook approximately 3-5 minutes, they should be tender but not mushy. Drain well. While potatoes are cooling, make the white sauce.

WHITE SAUCE​

  • In a medium pot over low heat melt butter, whisk in flour and salt, continue whisking until smooth. Slowly add the milk and continue whisking constantly until thickened and starts to boil. Remove from heat. Let cool slightly.
  • In an 8 inch (20cm) square baking dish, spread a couple of spoonfuls of white sauce on the bottom, making 3 layers, starting with the sliced potatoes, sprinkle of oregano, white sauce, broccoli florets (if too large cut into smaller pieces) and a sprinkle of parmesan cheese, continue for three layers. Bake for approximately 30 minutes . Let cool 5 minutes before serving. Enjoy!

Notes​


You can also freeze leftovers. Cool completely then transfer to an airtight container. Freeze for up to 3 months, thaw in the refrigerator and then reheat. Texture may change slightly upon thawing but will still be delicious.

Sorry Suzanne Rose, didn’t mean to offend I love a good potato bake and I love all vegetables and the dish probably tastes great But let’s be honest the dish in the photo was not the most appetizing visually 😋

Today was a nice weather change - the heat will return from tomorrow :(
It was a nice change and I spent all day cooking for the next two days, and Friday we will wat out.
I refuse to cook when it is above 32 deg

I don't think the nights will be cool either.

I wonder if the beaches are still polluted

I agree with the photo not looking tasty. Unfortunately I forgot to take a photo last time I cooked it.
I will remember when I make it next. The difference is mine was more golden on the top

Golden is good😊I’m hungry I love 🥔 and 🥦 😋hot here in Melbourne not letting cat out pavement will burn his little 🐾 pads.nice recipe.

It's 33 deg here and tomorrow 38 and Friday 40 . I think everyone needs to keep their pets inside .

This dish is really nice
I hope it’ll be cooler in Sydney by next Monday. Will be there with my daughter and granddaughter for a couple of weeks. Might have to make good use of the pool in the hotel 😀

There is supposed to be hot weather next week as well, be prepared for the humidity it's horrible.

Where about in Sydney are you staying and where are you coming from
