Potato and Broccoli Bake

When I made this I wasn't expecting it to be as good as it was.
Add as a side for meat, meatballs ect also a great side for a bbq

Recipe by An Italian In My Kitchen

INGREDIENTS

  • 4 medium potatoes (peeled)
  • ⅓ cup freshly grated Parmesan cheese
  • 2¼ cups broccoli florets
  • 2-3 sprigs oregano or thyme

WHITE SAUCE​

  • 2¾ cups milk
  • 3 tablespoons butter
  • 3 tablespoons plain flour
  • 1-2 pinches salt*
  • 1-2 dashes black pepper

*If you use unsalted butter add a bit more salt.​

Instructions​

  • Pre-heat oven to 180C./ 160°C fan-forced
  • 1. Boil the potatoes in salted water until tender but firm, remove to cool, then cut into ¼ inch slices, in the same water add the broccoli florets and cook approximately 3-5 minutes, they should be tender but not mushy. Drain well. While potatoes are cooling, make the white sauce.

WHITE SAUCE​

  • In a medium pot over low heat melt butter, whisk in flour and salt, continue whisking until smooth. Slowly add the milk and continue whisking constantly until thickened and starts to boil. Remove from heat. Let cool slightly.
  • In an 8 inch (20cm) square baking dish, spread a couple of spoonfuls of white sauce on the bottom, making 3 layers, starting with the sliced potatoes, sprinkle of oregano, white sauce, broccoli florets (if too large cut into smaller pieces) and a sprinkle of parmesan cheese, continue for three layers. Bake for approximately 30 minutes . Let cool 5 minutes before serving. Enjoy!

Notes​


You can also freeze leftovers. Cool completely then transfer to an airtight container. Freeze for up to 3 months, thaw in the refrigerator and then reheat. Texture may change slightly upon thawing but will still be delicious.

There is supposed to be hot weather next week as well, be prepared for the humidity it's horrible.

Where about in Sydney are you staying and where are you coming from
Flying in from Perth. Will stay in Zetland because my granddaughter will be studying dance at Brent Street for the next two years.

My two nieces studied at Brent Street. Zetland you are really central to everything including alot of shopping outlets .

You can get a bus from Zetland to the city and Bondi Beach.
There are so many places that are great to visit, Museums, Art galleries, Zoo, ferry trips to Manly, Jewish Museum ect

I already have my Opal card ready to use. Not brave enough to rent a car in Sydney.
Did your nieces find Brent Street quite demanding? It seems like it is but my granddaughter is very committed to dance. She’s already organised rental accommodation (not sure where) and a job five minutes away from where she’ll be living. She’ll be a busy girl.

It's very close to the city and airport. Close to Redfern, Newton really central to everything. I go to the area quite a bit to all the shopping outlets. We also go close by to The Grounds of Alexander for brunch look up that one

Sounds like an excellent location. My daughter did all the research so seems she did well! I’ll definitely be going shopping and to cafes. I’ll have a look on Google Earth to familiarise myself. I have a terrible sense of direction 🤪
Just looked up The Grounds of Alexander. Wow! How do you find the time for all your cooking?!? So much to do and see!

I want to give you a list of my favourite places in Sydney which are easy to get to from Zetland.

A Ferry from Circular Quay to Watson's Bay.
Takes about 20 minutes in the ferry across Sydney harbour, great picnic area or there is Doyles where you can either eat in or take away fish n chips.
The walk through the park up to The Gap lookout with breath taking views, sadly this place is where many take their lives.

A ferry to Manly
About 25 min trip , again amazing views on Sydney Harbour. Walk along the board walk through some great shops with loads of specials. Also great food shops, which we always grab food and head to the end of the board walk to an amazing beach . After lunch take a walk along the path to a beautiful hidden beach again beautiful views.

From Central Station
catch a bus to Bondi Beach , it's about a 25 minute trip. Great shops including food shops, beautiful beach . We always do the Bondi to Tamarama

You can catch a ferry from Circular Quay to Toronga Zoo about a 30 min trip.

You can get a bus from Zetland to Town hall in the city and walk down to Darling Harbour which you have The Chinese Gardens , powerhouse Museum, Madame Tsouds wax Museum and the Sea world Aquirium which my niece is a marine biologists there.

Depending how long you are here for. A highly recommended train trip from Central to Kiama and the blowhole a really beautiful trip . Takes 2 hours each way and you just use your opal card.

Everything is close to the station

Question was. What year was Hitler born

I said He was arrested in 1920 something prior to becoming the leader of the Nazis and I thought he was in his late 20s so we made a guess 1893 . The answer was 1889 and the other team got it, we left with a $30 food voucher

I don't know if it was hotter in the pub or outside when we left
