Pork Chops and Mushrooms

Ingredients
- 6 bone-in pork loin chops (around 1.2kg)
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 3/4 cup beef stock
- 1 can condensed cream of mushroom soup, undiluted ( homebrand is good)
- 1 can condensed cream of chicken soup, undiluted ( homebrand is good)
- 2 garlic cloves, minced
- 1/4 teaspoon paprika
- 1/4 teaspoon pepper
- 250g sliced mushrooms
- 1 large onion, halved and sliced thinly
- 1 tablespoon cornflour
- 1 tablespoon cold water
Directions
- Sprinkle pork chops with salt on both sides. In a large frypan, heat oil over medium heat. Brown pork chops in batches. Transfer to a slow cooker. Add stock to skillet, stirring to loosen browned bits from pan. Whisk in soups, garlic, paprika and pepper; pour over chops. Top with mushrooms and onions. Cover and cook on low until meat is tender, 5-7 hours.
- Combine cornflour and cold water until smooth; gradually stir into slow cooker. Return chops to slow cooker. Cover and cook on high for 30 minutes or until slightly thickened.
- Note.. if you dont have a slow cooker you can cook on stove top of low simmer but reduce cooking time to 4 hours. Or in oven in a covered baking dish with temp 120°C for 5 hours . In last 30 min add cornflour mixture
