Pineapple BBQ Baked Chicken Foil Packets in Oven

This recipe for Pineapple BBQ Baked Chicken Foil Packets in Oven is perfect for a weeknight meal. The chicken is juicy and flavourful, and the vegetables are crisp and tender. Ingredients:

2 skinless, boneless chicken breasts
A few pineapple chunks (we recommend just getting a tin of pineapple and using 4 slices)
1 red capsicum, diced
1 green capsicum, diced
Salt and black pepper, to tasteFor the sauce:1/4 cup of BBQ sauce
2 cloves garlic, minced (or 2 teaspoons dried garlic)
1 teaspoon paprika
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
Chopped coriander, to taste



Directions:

1. Preheat your oven to 180 degrees Celsius.

2. Lay two 30×30 cm squares of foil out on your work surface.

3. Place pineapple chunks and capsicum in the middle of each piece of foil. Season with salt and pepper, then top with each chicken breast. Season chicken with salt and pepper generously.

4. In a bowl, combine BBQ sauce, olive oil, paprika, minced garlic, lemon juice, and oregano. Divide the sauce over each chicken pack and sprinkle with additional chopped coriander.

5. Fold the foil over the chicken and vegetables to close the pack. Pinch the ends together so the pack stays closed.

6. Transfer the chicken foil packs to a baking sheet and bake for 35-40 minutes or until chicken is cooked through and veggies are tender. When the chicken is done, carefully open the foil packs, drizzle with more sauce and broil for 1 or 2 minutes to crisp up the chicken.

7. Serve the baked chicken foil packets immediately, garnished with more coriander. Enjoy!

To make this dish extra special, try serving it with a side of rice or quinoa. All good I would use sweet Chile sauce instead of bbq and cut back on herds and spices😉🇦🇺👍
 
Excuse my ignorance, but what does "broil" mean? I am assuming you would put it back in the oven with the foil packets open for a few minutes?

To cook by direct radiant heat, as over a grill or under an electric element.
