PENNE PASTA RECIPE WITH ZUCCHINI, TOMATO, BASIL & GARLIC

Looking for a tasty penne recipe? Try this tomato basil penne pasta with sauteéd zucchini and garlic. It's a quick and easy pasta recipe that can be ready within 30 minutes.

Ingredients

  • 500 g penne pasta
  • 60 mL extra virgin olive oil (about 4 tablespoons)
  • 2 garlic cloves, finely chopped
  • 2 medium zucchinis, thinly sliced
  • 450 g fresh plum tomatoes, chopped (or substitute 400 g can of diced tomatoes)
  • 1/4 cup (loosely packed) fresh basil leaves, torn
  • 1/3 cup grated Parmigiano-Reggiano cheese
  • Salt and pepper, to taste



Method

  1. Cook the pasta:
    Bring a large pot of salted water to the boil. Add the penne and cook according to the packet instructions until al dente. Drain and set aside.
  2. Sauté the garlic and zucchini:
    While the pasta cooks, heat the olive oil in a large frying pan over medium heat. Add the garlic and cook for 1–2 minutes, or until it just starts to turn golden.
  3. Add the vegetables:
    Add the zucchini slices and sauté for about 3 minutes, until just tender. Stir in the chopped tomatoes and basil. Simmer for another 2 minutes. Season with salt and pepper to taste.
  4. Combine and serve:
    Add the drained pasta to the pan and toss everything together until well combined and heated through.
  5. Finish with cheese:
    Serve immediately, topped with grated Parmigiano-Reggiano.
