PENNE PASTA RECIPE WITH ZUCCHINI, TOMATO, BASIL & GARLIC

Ingredients
- 500 g penne pasta
- 60 mL extra virgin olive oil (about 4 tablespoons)
- 2 garlic cloves, finely chopped
- 2 medium zucchinis, thinly sliced
- 450 g fresh plum tomatoes, chopped (or substitute 400 g can of diced tomatoes)
- 1/4 cup (loosely packed) fresh basil leaves, torn
- 1/3 cup grated Parmigiano-Reggiano cheese
- Salt and pepper, to taste
Method
- Cook the pasta:
Bring a large pot of salted water to the boil. Add the penne and cook according to the packet instructions until al dente. Drain and set aside. - Sauté the garlic and zucchini:
While the pasta cooks, heat the olive oil in a large frying pan over medium heat. Add the garlic and cook for 1–2 minutes, or until it just starts to turn golden. - Add the vegetables:
Add the zucchini slices and sauté for about 3 minutes, until just tender. Stir in the chopped tomatoes and basil. Simmer for another 2 minutes. Season with salt and pepper to taste. - Combine and serve:
Add the drained pasta to the pan and toss everything together until well combined and heated through. - Finish with cheese:
Serve immediately, topped with grated Parmigiano-Reggiano.
