One-pot Spanish chorizo and potato soup

This soup is made with simple ingredients that can be easily found at your local grocery store. Chorizo is a type of pork sausage that is popular in Spanish cuisine. It is made from coarsely chopped pork and pork fat, seasoned with garlic, pimentón (a type of smoked paprika) and salt. Ingredients:
1 tsp extra virgin olive oil
1 chorizo, thinly sliced
1 red onion, finely chopped
1 tsp mild paprika
1 tbsp tomato paste
500g potatoes, peeled, roughly chopped
1 red capsicum, chopped
1 can of corn kernels, drained, rinsed
1 tomato, chopped
1 litre Chicken stock
1/3 cup chopped fresh flat-leaf parsley leaves
1/4 tsp dried chilli flakes
Crusty bread to serve
Instructions:
1. Heat the oil in a large saucepan over medium heat. Add the chorizo and cook for 2-3 minutes or until browned.
2. Add the onion and cook for 5 minutes or until softened. Then add the paprika and tomato paste to the pan. Cook, stirring, for 1 minute or until well combined.
3. Add the potatoes, capsicum, corn, tomato and chicken stock. Bring to the boil. Reduce the heat to low and simmer for 15-20 minutes or until the potatoes are tender—season with salt and pepper.
4. Add the parsley and chilli flakes and cook for 1 minute.
5. Serve with crusty bread and extra parsley leaves.

-Garnish with crispy bacon.
-Serve with a side of green salad.
