One-pot sausage stew

Are you on the lookout for a cheap and healthy dinner? Then look no further than this one-pot sausage stew! It’ll be ready on your table in under 45 minutes with minimal work.

Ingredients
1 tbsp olive oil
500g extra-lean beef chipolata sausages (or your sausages of choice)
1 medium brown onion, halved, sliced
2 garlic cloves, crushed
400g can Coles Cannellini Beans, drained, rinsed
800g can diced tomatoes
1/4 cup barbecue sauce
1 tbsp brown sugar
Chopped fresh flat-leaf parsley leaves, to serve (optional)
Crusty bread, to serve (optional)

Method
  1. Heat half the oil in a large, heavy-based saucepan over medium-high heat. Cook sausages in batches, turning, for 5 to 6 minutes or until browned all over. Transfer to a plate.
  2. Heat the remaining oil in a pan. Add onion and garlic. Cook, stirring, for 5 to 6 minutes or until onion has softened. Add beans, tomato, barbecue sauce and sugar. Return sausages to the pan. Cover. Bring to the boil. Reduce heat to medium-low. Simmer, uncovered, for 25 minutes or until sausages are cooked through and sauce thickened. Sprinkle with parsley. Serve with bread.

Something wrong between the recipe & the photo, when were the sausages sliced ?
Hey @Mrs P The image is just a stock image! That's why the image source says shutterstock :) A lot of our recipes are either our own we've been making for years (but never take a photo of, because it's just a normal weeknight dinner), member produced recipes, or recipes we find on the internet! We have images of our own recipes here and there and sometimes members post photos of their food too, but sometimes we have to work with a stock image here and there!

You can chop up the sausage if you like to have it sliced throughout the stew, if not, there's honestly no need. I usually keep mine whole! I feel like it adds to the flavour!
