One-pot nacho bake

Who says nachos only have to be finger food? This one-pot nacho bake is a fun and easy twist on the classic dish that will surely be a hit with family and friends. Best of all, it can all be made in just one pot! This dish is perfect when you’re short on time but need a hearty and healthy meal.

Ingredients:

tortilla chips, roughly broken
1 tbsp extra virgin olive oil
1 (400g) sweet potato, peeled, diced
1 red capsicum, sliced
2 zucchinis, halved, cut into 1cm-thick slices
420g can Heinz Chilli Beanz Hot
2 cans corn kernels, drained
3/4 cup grated tasty cheese
Fresh coriander sprigs to serve



Instructions:

1. Heat oil in a large, ovenproof frying pan over medium-high heat. Add the sweet potato and cook for 3 minutes or until golden.

2. Add the capsicum and cook for 3 minutes. Add the zucchinis and cook for a further 1 minute.

3. Reduce heat to low and stir in the chilli beans, corn, and 1/4 cup of water—season with salt and pepper. Cover with a lid and cook for 10 minutes or until vegetables are tender.

4. Preheat the grill to high. Sprinkle the bean mixture over the tortilla chips, then add cheese. Grill for 2 minutes or until cheese is melted.

5. Serve immediately topped with fresh coriander sprigs.

Optional ways to make the dish extra special:

- Add some chopped bacon or chorizo for a smoky flavour.

- Top with sour cream, avocado, or guacamole for a creamy finish.

- Serve with a side of pickled jalapeños for a bit of heat.
