One-Pot Garlicky Prawns and Spinach

Prawns are a delicacy in many parts of the world, and it is no secret that Australia is home to some of the best in the world.

There's no strict recipe to cook it — you can pan-fry it, boil it, grill it, or add it to pasta sauce or salads. The only limit is your imagination!

Here, you’ll learn how to make a simple one-pot dish using prawns, spinach, and garlic — perfect for a quick mid-week dinner.

You will only need a few staple stores to prepare this recipe!

Here’s what you’ll need:


3 tablespoons extra-virgin olive oil, divided

6 medium cloves garlic, sliced, divided

450 grams spinach

¼ teaspoon salt, plus another 1/8 teaspoon

1½ teaspoons lemon zest

1 tablespoon lemon juice

450g prawns (about 21-30), peeled and deveined

¼ teaspoon crushed red chilli

1 tablespoon finely chopped fresh parsley

Start by heating one tablespoon of oil in a large pot over medium heat. Add half the garlic and cook until it starts to brown.

Next, add the spinach and ¼ teaspoon of salt. Cook for about 3 to 5 minutes until it is mostly wilted. Once good, take the spinach off the heat and add the lemon juice. Transfer the cooked spinach to a bowl and keep it warm while you prepare the main course.

Then, add the remaining oil to the pot and increase the heat to medium-high. Add the remaining garlic and cook until it starts to brown. Add the prawns along with the crushed red chilli and the remaining salt.


After about 3-5 minutes, or when the prawns are cooked just right, remove them from the heat and place them over the spinach. Top it off with some lemon zest and parsley, and you’re ready!
