One-Pan Sweet Potato And Egg Hash

Ingredients:
1 tbsp extra virgin olive oil
1 red onion, finely chopped
600g sweet potato, peeled, cut into 1.5cm pieces
1 red capsicum, deseeded, finely chopped
2 garlic cloves, crushed
2 zucchini, cut into 1cm pieces
4 eggs
1/4 cup fresh basil leaves
Pinch of dried chilli flakes (optional)
Instructions:
1. Heat oil in a large frying pan over medium heat. Cook onion, stirring occasionally, for 3-4 minutes or until softened.
2. Add sweet potato, capsicum, and garlic. Cook, stirring occasionally, for 10 minutes or until vegetables are tender. Add zucchini and cook for a further 5 minutes.
3. Make four indentations in the vegetable mixture. Crack an egg into each indentation. Cook for 3-4 minutes or until eggs are cooked to your liking.
4. Stir in basil and chilli flakes (if using)—season with salt and pepper. Serve immediately.To make this dish extra special, you could:- Top with avocado, feta cheese, or sour cream
- Add some spice with cumin or paprika.
- Stir in some greens like spinach, kale, or Swiss chard
