Omelettes Done Nans Way

My Grandmother was taught how too cook the perfect omelette by her mother inlaw.
I have made it this way and with no doubt it is the perfect omelette.
See at the bottom for variations.
Serves 2
Ingredients
4 eggs
4 tablespoons milk
1/2 teaspoon salt
pinch pepper
1 tablespoon butter
Method
1 . Separate the egg yolks and egg whites.
Beat egg yolks until light in colour, add the milk, salt and pepper and beat until completely combined.
2. Beat egg whites until stiff , the fold and cut into the yolk mixture.
3. Heat the frypan , add butter and melt.
4. pour egg mixture into pan and turn stove down to low..
5. Cook slowly ( this is where I normally put a lid on but nan didnt )
6. Turn omelette over after 5 minutes then put into a preheated oven 170deg and cook for further 5 minutes. ( this is my grandmother'srecipe but I would change it here and not put in oven I would just add a lid and cook on low for 3 minutes.
Turn out onto warmed plated and serve at once.
Serves 2.
VARIATIONS
VEGETABLE OMELETTE
Make recipe above but while folding in egg whites fold in cooked vegetables of your choice eg corn, mushrooms, asparagus and even peas..
Or make omelette as above then when cooked place on plate and add cooked vegies to one half and fold
Meat OMELETTE
Make omelette recipe above add to uncooked omelette mixture any cooked and chopped meat or fish such as ham, chicken , corned beef , left over roast lamb or flaked fish .
Tomato Omelette
Add finely chopped tomato to pan and cook then add egg mixture and cook as recipe above.
Chip Omelette .
If you have hot chips from left over from dinner the night before try heating the chips in a frypan then pour omelette mixture on top and continue recipe above
