Old favourite curried sausages

Curried sausages recipe​

Ingredients (11)
  • 1 tbsp olive oil
  • 800g thin beef sausages
  • 1 large brown onion, thinly sliced
  • 2 carrots, peeled, thinly sliced
  • 2 garlic cloves, crushed
  • 1 tbsp KEEN'S Traditional Curry Powder
  • 2 tbsp fruit chutney
  • 2 cups Massel chicken style liquid stock
  • 1 cup frozen peas
  • Coles White Medium Grain Rice, Steamed, to serve
  • Parsley leaves, to serve
Step 1
Heat oil in a large, heavy-based saucepan over medium-high heat. Cook sausages, in batches, turning, for 5 to 6 minutes or until browned all over. Transfer to a large plate.

Step 2
Add onion, carrot and garlic. Cook, stirring, for 5 minutes or until onion has softened. Add curry powder. Cook, stirring, for 30 seconds or until fragrant. Add fruit chutney and stock. Return sausages to pan. Cover, bring to the boil. Reduce heat to medium-low. Simmer, uncovered, for 25 minutes or until sausages are cooked through and sauce thickens.

Step 3
Stir in peas. Season. Cook for 1 to 2 minutes or until heated through. Serve with steamed rice and sprinkled with parsley leaves.

A couple of months ago I was looking at the sausages at the supermarket and this gentleman started up a conversation about how there isn't any great tasting old fashion sausages - I agreed and told him I was cooking Curried sausages for dinner that night, his eyes lit up and said he hadn't had those in years and he thought it would be great to make some for his wife that weekend. We both went our separate ways to go and buy our sausages from the butcher

This is nice. I look for different ways with different meats to make it more interesting.
For instance you can have this withsweet mashed potatoes which will soak up liquid. Or what I do. I take whatever I cooked out keep it warm and use residue from the cooked meal even stir fry and couch some rice in that same pan to flavour rice as a side. I add little sauce that I get aldi called spicy BBQ sauce. Just table spoon. It comes out flavor some

Oh I haven’t made this in ages, I might whip up some tomorrow, as I live alone, I will just keep the leftovers in the Freezer. Will just defrost & heat up in the Microwave when I don’t feel like Cooking. Thank You @Babybird fir all Your Delicious Recipes that You Share 🥰
I do same cook little extra and freeze rest.
