Old Fashion Rocky Road

I think I grew a love for rocky road when I worked at Darrell Lea when I was 16.

I decided to make a batch as it was much cheaper.

What I love is you can add whatever you want.

It also makes nice gifts , just wrap in cellophane and tie with a nice bow.
I would do this at Xmas and give to everyone at work.

If giving as a gift I leave out the nuts.

CHOCOLATE​

  • 360g or 2 blocks milk chocolate I use Cadbury or milk chocolate melts , chips or block, chopped
  • 2 tbsp vegetable oil
  • 3 cups (250g) marshmallows, pink and white , cut in half
  • 3/4 cup raspberry lollies , halved, or snakes cut into small pieces ,or even gummy bears
  • 1/2 cup desiccated coconut
  • 1/2 cup (35g) unsalted peanuts very roughly chopped , optional, I usually leave these out due to allergies but is a traditional ingredient

Instructions​

  • Grease and line a 20cm/8" square pan with baking paper
  • Place chocolate and oil in a bowl. Microwave in 30 second increments, stirring in between, until melted and smooth.
  • Stir in all other ingredients into the chocolate. Pour into pan, spreading out evenly.
  • Refrigerate for 3 hours or until fully cool.
  • Cut – Remove from the fridge 30 minutes prior to cutting.
These are my other add-ins. Coconut is a must. Then you can also use Biscuits crumbled, any other nuts eg almonds, walnuts , dried fruit . I've also at times added chocolates like Maltesers or Clinkers and chopped licorice. Add as much as you want as long as there is enough chocolate to coat everything.

Will keep for a few weeks kept in an airtight container Refrigerate if hot where you are otherwise it will melt

  • 3 cups (250g) marshmallows, pink and white , cut in half (firmly pack the cups!)
  • 3/4 cup raspberry lollies , halved, or snakes cut into small pieces ,or even gummy bears
  • 1/3 cup (30g) desiccated coconut
  • 1/2 cup (35g) unsalted peanuts , very roughly chopped , optional

I love rocky road and most of my family and friends love my recipe and ask me often to bring in some more rocky road .
Mine are very well filled , not just cheap chocolate and large chunks of marshmallows. I use good chocolate , usually Lindt 80 % and have 250 g dark and 200 g milk chocolate . Also have macadamia’s, red licorice , coconut and gluten free biscuits , break up in small pieces and some dried cranberries . I cut my marshmallow in 4 pieces . Do not add any oil.
I intend to make it in the cooler weather as it can get soft quickly . I love them straight out of the freezer. The crunch and the softness really blends in well.

I always use Cadbury chocolate, I love that you can add anything to it . I also add gummie bears and have also made it using white chocolate

Now I know where Nagi from RecipeTin eats gets her recipes from SDC members
This one isn't Nagi's it's a traditional recipe
Nagi is one of my favourite cooks , she hates being called a chef.
I have her signed cookbook and chat with her on instagram.
I have to say I do Change her recipes a bit to suite me and my family .
I have even given her a couple of recipes one being a Greek pasta dish
