Old Fashion Rocky Road

I think I grew a love for rocky road when I worked at Darrell Lea when I was 16.
I decided to make a batch as it was much cheaper.
What I love is you can add whatever you want.
It also makes nice gifts , just wrap in cellophane and tie with a nice bow.
I would do this at Xmas and give to everyone at work.
If giving as a gift I leave out the nuts.
Will keep for a few weeks kept in an airtight container Refrigerate if hot where you are otherwise it will melt

CHOCOLATE
- 360g or 2 blocks milk chocolate I use Cadbury or milk chocolate melts , chips or block, chopped
- 2 tbsp vegetable oil
- 3 cups (250g) marshmallows, pink and white , cut in half
- 3/4 cup raspberry lollies , halved, or snakes cut into small pieces ,or even gummy bears
- 1/2 cup desiccated coconut
- 1/2 cup (35g) unsalted peanuts very roughly chopped , optional, I usually leave these out due to allergies but is a traditional ingredient
Instructions
- Grease and line a 20cm/8" square pan with baking paper
- Place chocolate and oil in a bowl. Microwave in 30 second increments, stirring in between, until melted and smooth.
- Stir in all other ingredients into the chocolate. Pour into pan, spreading out evenly.
- Refrigerate for 3 hours or until fully cool.
- Cut – Remove from the fridge 30 minutes prior to cutting.
