Two fluffy whipped cream layers sandwich whole berry cranberry sauce filling to create a cranberry version of this classic Southern dessert. And let me just say, No-Bake Cranberry Yum Yum is truly one cranberry dessert that lives up to its name.

PREP TIME: 30 MINTOTAL TIME: 30 MIN


INGREDIENTS

Crust:

• 1 1/4 c. graham cracker crumbs

• 1/4 tsp. ground cinnamon

• 6 T. unsalted butter, melted

Cream Cheese Mixture:

• 1 (8 oz.) package cream cheese, softened

• 1/2 c. confectioners' sugar

• 2 c. whipping cream

• 1 tsp. vanilla extract, divided

• 3 T. granulated sugar

Filling & Topping:

• 1 (14 oz.) can whole berry cranberry sauce

• 3 T. chopped pecans


INSTRUCTIONS

Prepare the Crust:

• In a bowl, combine graham cracker crumbs, cinnamon, and melted butter. Blend with a fork until crumbs are moistened.

• Set aside 1 tablespoon of crumbs for topping.

• Press crumb mixture into the bottom of a 9x9-inch pan that's been sprayed with non-stick cooking spray.

Prepare the Cream Cheese Mixture:

• With an electric mixer, cream together softened cream cheese, 1/2 cup confectioners' sugar, and 1/2 teaspoon vanilla until smooth.

• In a separate bowl, whip the whipping cream, 3 tablespoons granulated sugar, and 1/2 teaspoon vanilla extract until stiff peaks form.

• By hand, mix together whipped cream and cream cheese mixture until well combined.

Assemble the Yum Yum Layers:

• Spread a little less than half the cream cheese/whipped cream mixture evenly over the crust.

• Stir cranberry sauce a bit in its can to break it up. Drop cranberry sauce by large spoonfuls on top of the cream cheese layer. Gently spread cranberry sauce filling evenly over the cream cheese layer.

• Top cranberry layer with the remaining cream cheese/whipped cream mixture. Gently spread it evenly over the cranberry layer, covering it completely.

• Combine chopped pecans and reserved 1 tablespoon graham cracker crumbs. Sprinkle evenly over the top.

• Cover and refrigerate for several hours or overnight before serving.

Substitute Arnott's Granita biscuits if you can't get graham cracker just add tablespoons cinamin and 2 tablespn brown sugar mix it with crumble Crackers for the topping

When you put a T beside an amount I presume this is a tablespoon?

am I the only one driven mad by the use of American recipes on Australian sites? Graham crackers , for example, I have never seen or tasted. I am not sure if they are salty or sweet , and perhaps if I knew I could find a substitute . Tinned cranberries ? not on most supermarket shelves here. I have packets of dried ones available . It makes doing one of these recipes quite unreliable and who wants that at Christmas?

What are the quantities referred to in this recipe? The ingredients read well but unless the quantities can be measured, who knows what we will turn up with.

You can use digestive biscuits or Marie biscuit, but I agree with your statement what’s the use of these recipes if you can’t get the ingredients.l had a recipe which needed corn syrup which is American I did find some in an IGA store but only in that one store, cost me $8 over there it’s only 2 or 3 dollars.

Arnotts Marie are the closest to Graham crackers the Granita are to wheaty

Honey can be used instead corn syrup
