Mum's Beef Stroganoff

Here is a family favourite for a cold winter's night.

Ingredients
- 4 tbs plain flour
- 500g beef sirloin steak, cut into strips
- 2 tbs butter
- 1 1/2 cup mushrooms thinly sliced
- 1/2 cup onion chopped
- 1 garlic clove minced
- 1 1/4 cups beef stock
- 1 cup sour cream
- 2 tbs sherry
- 1 tbs tomato paste
Method
- Combine 1 tablespoon flour with some salt and dredge meat in mixture.
- Melt some butter in a frypan.
- Add meat and brown on all sides.
- Add mushrooms, onions and garlic. Cook for 3-4 minutes or until nearly tender.
- Remove the meat mixture and add 2 tablespoons butter to the same pan.
- When the butter has melted add flour and tomato paste.
- Cook slowly and pour in beef stock, cooking until thickened.
- Return meat mixture to pan, then add sour cream and sherry.
- Serve with rice or noodles.
