Mum's Beef Stroganoff

Here is a family favourite for a cold winter's night.

Ingredients​

  • 4 tbs plain flour
  • 500g beef sirloin steak, cut into strips
  • 2 tbs butter
  • 1 1/2 cup mushrooms thinly sliced
  • 1/2 cup onion chopped
  • 1 garlic clove minced
  • 1 1/4 cups beef stock
  • 1 cup sour cream
  • 2 tbs sherry
  • 1 tbs tomato paste

Method​

  1. Combine 1 tablespoon flour with some salt and dredge meat in mixture.
  2. Melt some butter in a frypan.
  3. Add meat and brown on all sides.
  4. Add mushrooms, onions and garlic. Cook for 3-4 minutes or until nearly tender.
  5. Remove the meat mixture and add 2 tablespoons butter to the same pan.
  6. When the butter has melted add flour and tomato paste.
  7. Cook slowly and pour in beef stock, cooking until thickened.
  8. Return meat mixture to pan, then add sour cream and sherry.
  9. Serve with rice or noodles.
