Light Chicken Korma

Switch up your typical chicken curry for this light chicken korma recipe. Korma is a dish originating in South Asia, consisting of meat or vegetables braised with yogurt (dahi), water or stock, and spices to create a thick sauce. The word korma is derived from the Urdu word kormā or Persian word kormā, meaning 'braise' and referring to the cooking technique used in the dish. This recipe uses chicken, but you could also use lamb, beef, prawns, or paneer (a type of Indian cheese).



Ingredients:

2 tsp oil (whatever you have on hand)

500g chicken breast fillets, thinly sliced

2 brown onions, thinly sliced

2 tbsp korma curry paste

1 cinnamon stick

8 cardamom pods, lightly crushed

1/2 tsp Chicken style stock powder

2 carrots, peeled, sliced diagonally

200g green beans, trimmed, halved

1 bunch broccolini, trimmed, cut into 4cm lengths

70g (1/4 cup) natural yoghurt

1 tbsp almond meal

2 roti, warmed and halved, to serve

Salt and pepper to taste.





Instructions:


1. Heat the oil in a large frying pan over medium heat. Add the chicken and cook for 3 minutes on each side or until golden. Transfer the chicken to a plate.

2. In the same pan, add the onion and cook for 3-4 minutes or until softened. Add the korma curry paste, cinnamon stick, and cardamom pods. Cook stirring for 2 minutes or until fragrant. Add 1 cup of water to the pan, then stir in the stock powder and carrots.

3. Return the chicken to the pan. Bring to a boil, then partially cover and reduce the heat to low. Simmer for 10 minutes or until the carrots are tender.

4. Add the green beans and broccolini and cook for 5 minutes or until the vegetables are tender.

5. Remove from heat and add the yoghurt and almond meal—season with salt and pepper.

6. Divide the chicken korma among serving bowls. Serve with roti.

To make this dish extra special, you could:

-Add 1/2 cup of frozen peas along with the green beans and broccolini

-Swap out the macadamia oil for butter

-Garnish with chopped fresh coriander.
